Air Fryer Catfish Tacos

Ingredients

½ lb Heartland Catfish thawed

3 tbsp. unsalted butter

3 limes

1 tsp. chili powder

½ tsp. garlic powder

Pinch of salt

½ cup all-purpose flour

corn tortillas

1 avocado

½ cup of water

½ cup chopped green onions

½ cup cilantro

2 cloves of garlic

½ cup greek yogurt

½ medium head of purple cabbage


Instructions

  1. Preheat the Air Fryer to 400 degrees.
  2. Mix butter, juice from 2 limes, chili powder, garlic powder and salt in a small bowl.
  3. Spread catfish on a baking tray and pour mixture over catfish.
  4. Dredge the catfish in the flour.
  5. Cook the catfish in the Air Fryer for 15 minutes.
  6. Make the dressing.
  7. Blend oil, water, green onions, cilantro, garlic, juice from 1 lime, greek yogurt and salt to make slaw dressing.
  8. Slice the cabbage thinly and pour the dressing mixture over the cabbage.
  9. Slice the avocado to garnish.
  10. Plate the catfish over corn tortillas and top with cabbage slaw.
