Cozy Catfish Stew

Ingredients

  • 1 ½ lb Heartland Catfish Fillets
  • 2 tbsp olive oil
  • ½ whole white onion, diced
  • 2 cloves garlic, minced
  • 15 oz can diced tomato
  • ½ cup coconut milk
  • ½ cup sour cream
  • 2 tbsp tomato paste
  • 1 whole red bell pepper, sliced
  • 1 whole green pepper, sliced
  • Sea salt to taste
  • Pepper to taste
  • ½ tsp red pepper flakes
  • 1 tbsp fresh cilantro

Instructions

  1. Heat oil in a large pot. Add diced onions and garlic and stir until fragrant, or for about 3 minutes.
  2. Add in diced tomatoes and coconut milk. Give mixture a stir.
  3. Add sour cream and tomato paste. Stir.
  4. Add sliced red and green peppers.
  5. Using a sharp knife, chop Heartland Catfish Fillets into chunks and add to the pot.
  6. Simmer over medium heat for 9 minutes and then flip the catfish. Continue to simmer for 3 minutes.
  7. Serve over rice or quinoa, garnish with cilantro and enjoy with a side of your favorite bread.
