Refreshing Pan-Seared Catfish with Pomegranate Salsa

  • 4 Heartland Frozen Catfish Fillets
  • ½ teaspoon garlic powder
  • Kosher-salt
  • Freshly-cracked black pepper
  • 1 tablespoon olive oil or butter
  • 1 cup fresh pomegranate arils
  • ⅓ cup chopped fresh cilantro
  • ¼ cup chopped red onion
  • 1 jalapeno, cored and chopped
  • Juice of 1 lime


1) Season fillets with cumin, salt and pepper.

2) Heat oil in a large pan until simmering.

3) Add seasoned Heartland Catfish Fillets.

4) Flip fillets after they begin to brown.

5) Simmer until the fish is cooked through.

6) Chop vegetables while your fish cooks.

7) Core and dice your jalapeno pepper. Dice your onion.

8) Mix pomegranate and chopped vegetables together.

9) Add lime juice, season and toss your salsa.

10) Add your favorite greens and enjoy!
