Pumpkin Seed Spiced Catfish Fillets

Ingredients

  • 1 cup pumpkin seeds
  • ½ cup sunflower seeds
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 2 egg whites
  • ¼ cup olive oil
  • 2 catfish fillets

Instructions

  1. Mix dry ingredients on a baking sheet.
  2. Roast dry ingredients in the oven at 350º until golden brown.
  3. Blend roasted dry ingredients until fine for catfish crust.
  4. Whisk egg whites in a bowl.
  5. Dip catfish fillets in egg whites and cover in pumpkin seed crust.
  6. Add olive oil to a pan and sear catfish until flaky.
  7. Finish in the oven at 350º for 10 minutes.
  8. Serve and enjoy!
