Ingredients

Scale
  • 4 Heartland Catfish U.S. Farm-Raised Fillets
  • 2 teaspoons minced garlic
  • 1 cup grits
  • 2 cups heavy cream
  • 1 tablespoon butter, unsalted
  • 8 ounces shredded gouda cheese
  • ½ teaspoon olive oil
  • ¼ cup honey
  • 1 ½ teaspoon cayenne
  • Black pepper
  • Salt
  • Chopped walnuts (optional)

Instructions

  • Bring 2 cups of water and 2 cups of heavy cream to a boil.
  • Slowly whisk in grits and reduce heat to medium-low. Cover and let cook for 5-7 minutes or until grits thicken. Occasionally stir.
  • Once grits thicken, stir in salt, black pepper and 1 ½ tsp minced garlic.
  • Remove from heat. Shred gouda cheese and add to grits. Combine and set aside.
  • Season catfish fillets with salt and pepper on both sides.
  • Heat olive oil in skillet over medium heat.
  • Place the catfish fillets in skillet and cook for about 4 minutes on each side. Set aside when cooked.
  • Melt butter in medium saucepan. Add cayenne and honey, stir to combine.
  • Bring sauce to a simmer and stir in remaining minced garlic. Let the sauce simmer for 2-3 additional minutes and remove from heat.
