Ingredients

- 4 Heartland Catfish U.S. Farm-Raised Fillets
- 2 teaspoons minced garlic
- 1 cup grits
- 2 cups heavy cream
- 1 tablespoon butter, unsalted
- 8 ounces shredded gouda cheese
- ½ teaspoon olive oil
- ¼ cup honey
- 1 ½ teaspoon cayenne
- Black pepper
- Salt
- Chopped walnuts (optional)
Instructions

1) Bring 2 cups of water and 2 cups of heavy cream to a boil.
2) Slowly whisk in grits and reduce heat to medium-low. Cover and let cook for 5-7 minutes or until grits thicken. Occasionally stir.

3) Once grits thicken, stir in salt, black pepper and 1 ½ tsp minced garlic.
4) Remove from heat. Shred gouda cheese and add to grits. Combine and set aside.

5) Season catfish fillets with salt and pepper on both sides.
6) Heat olive oil in skillet over medium heat.
7) Place the catfish fillets in skillet and cook for about 4 minutes on each side. Set aside when cooked.

8) Melt butter in medium saucepan. Add cayenne and honey, stir to combine.
9) Bring sauce to a simmer and stir in remaining minced garlic. Let the sauce simmer for 2-3 additional minutes and remove from heat.

10) Place catfish fillets over gouda grits and drizzle with hot honey sauce. Garnish with chopped walnuts and enjoy!
